Ingredients
  • 1.5 cup Pie crust
  • 2 cup Nectarines
  • 1/2 cup Sugar
  • 1 tablespoon Cornstarch
  • 1 piece Vanilla bean
  • 1 tablespoon Lemon juice
  • 1 piece Egg
  • 1 tablespoon Milk
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and cut out circles to fit your mini pie tins.
  3. Place the pie crust circles into the tins and press them down gently.
  4. In a bowl, mix together the sliced nectarines, sugar, cornstarch, scraped vanilla bean seeds, and lemon juice.
  5. Spoon the nectarine mixture into the pie crusts.
  6. In a small bowl, whisk together the egg and milk.
  7. Brush the egg wash over the edges of the pie crusts.
  8. Bake the mini pies for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Allow the pies to cool for at least 1 hour before serving. Enjoy!
