Ingredients
  • 1.5 cup All-purpose flour
  • 0.5 cup Granulated sugar
  • 2 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 2 large Eggs
  • 0.75 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Rum flavoring
  • 0.25 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a mini muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, melt the butter and let it cool slightly. Then, whisk in the eggs, milk, vanilla extract, and rum flavoring.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  8. Once cooled, dust the muffins with powdered sugar before serving.
