Ingredients
  • 8 ounce Figs
  • 1 cup Walnuts
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 1/2 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Mascarpone cheese
  • 1/4 cup Powdered sugar
  • 1 teaspoon Lemon zest
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a mini cake pan.
  2. In a bowl, mix together the flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped figs and walnuts.
  5. Spoon the batter into the prepared cake pan, filling each cavity about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
  8. In a small bowl, mix together the mascarpone cheese, powdered sugar, and lemon zest until smooth.
  9. Once the cakes have cooled, spread a dollop of the mascarpone mixture on top of each cake.
  10. Serve and enjoy!
