  6. Stir in the shredded chicken and frozen mixed vegetables. Season with salt and black pepper.
  7. Roll out the puff pastry sheets and cut into circles that fit the size of your muffin tin.
  8. Place the puff pastry circles into the muffin tin, pressing them down gently.
  9. Spoon the chicken mixture into each puff pastry cup.
  10. Brush the beaten egg over the edges of the puff pastry.
  11. Bake for 20-25 minutes, or until the puff pastry is golden brown.
