  2. In a saucepan, combine the apricots, sugar, cornstarch, lemon juice, and cinnamon. Cook over medium heat until the mixture thickens, stirring frequently.
  3. Roll out the pie crust and cut it into circles to fit your mini pie pans.
  4. Place the pie crust circles into the pans and press them down gently.
  5. Fill each pie crust with the apricot mixture.
  6. Brush the edges of the crust with beaten egg.
  7. Bake for 20-25 minutes, or until the crust is golden brown.
  8. Allow the mini apricot pies to cool for 10 minutes before serving.
