  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and cut it into circles to fit the mini pie tins.
  3. Peel and dice the apples.
  4. In a bowl, mix the diced apples, sugar, cinnamon, lemon juice, and cornstarch.
  5. Fill each pie crust with the apple mixture.
  6. Cover the pies with another circle of pie crust and seal the edges.
  7. Brush the tops of the pies with beaten egg.
  8. Make a small slit on the top of each pie for steam to escape.
  9. Bake the mini apple pies for 25 minutes or until golden brown.
  10. Allow the pies to cool for 15 minutes before serving.
