Mincemeat pie filling traditionally contained meat, but modern versions often use suet as a substitute.

  1. In a large bowl, mix together apples, raisins, currants, suet, brown sugar, lemon zest, lemon juice, mixed spice, and brandy.
  2. Cover the bowl and let the mixture rest for 30 minutes.
  3. Preheat the oven to 350°F (175°C).
  4. Roll out one pie crust and line a pie dish with it.
  5. Pour the mincemeat filling into the pie crust.
  6. Roll out the second pie crust and cover the filling, sealing the edges.
  7. Make a few slits on the top crust to allow steam to escape.
  8. Bake in the preheated oven for 50-60 minutes, or until the crust is golden brown.
  9. Remove from the oven and let it cool before serving.
