  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the tart cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  3. Roll out one pie crust and place it in a 9-inch pie dish.
  4. Pour the cherry filling into the pie crust.
  5. Dot the filling with butter.
  6. Roll out the second pie crust and place it on top of the cherry filling.
  7. Trim and crimp the edges of the pie crust.
  8. Brush the top crust with beaten egg.
  9. Cut slits in the top crust to allow steam to escape.
  10. Bake for 45-50 minutes, or until the crust is golden brown.
  11. Allow the pie to cool for at least 2 hours before serving.
  12. Dust with powdered sugar before serving.
