  1. In a large mixing bowl, combine the apples, raisins, currants, brown sugar, mixed spice, lemon zest, lemon juice, vegetable suet, almonds, orange zest, orange juice, and brandy.
  2. Mix well until all the ingredients are evenly distributed.
  3. Cover the bowl with plastic wrap and let it rest for 20 minutes.
  4. Preheat the oven to 180°C (350°F).
  5. Roll out the pie crust and line a pie dish with it.
  6. Pour the mincemeat mixture into the pie crust.
  7. Cover the pie with another layer of pie crust and seal the edges.
  8. Make a few small slits on the top crust to allow steam to escape.
  9. Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown.
  10. Remove from the oven and let it cool for 10 minutes before serving.
