  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a large bowl, combine oats and boiling water. Let it stand for 20 minutes.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the creamed mixture, alternating with the oat mixture. Stir in nuts and raisins if desired.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  7. Serve and enjoy!
