Ingredients
  • 8 ounce Pie Crust
  • 2 cup Ripe Mangoes
  • 2 tablespoon Lime Juice
  • 2 tablespoon Cornstarch
  • 1 cup Sugar
  • 0.25 teaspoon Salt
  • 1 cup Whipped Cream
  • 8 sprig Mint Leaves
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the pie crust and press it into a pie dish.
  3. In a blender, puree the ripe mangoes until smooth.
  4. In a saucepan, combine the mango puree, lime juice, cornstarch, sugar, and salt. Cook over medium heat until thickened.
  5. Pour the mango mixture into the pie crust.
  6. Bake for 30-35 minutes, or until the crust is golden brown.
  7. Remove from the oven and let it cool for 2 hours.
  8. Top with whipped cream and garnish with mint leaves.
  9. Serve chilled and enjoy!
