Mangoes are known as the ‘king of fruits’ in many parts of the world and are a symbol of love and friendship in Hawaii.

Preheat the oven to 350°F (175°C).

Roll out the pie crust and press it into a pie dish.

In a blender, puree the ripe mangoes until smooth.

In a saucepan, combine the mango puree, lime juice, cornstarch, sugar, and salt. Cook over medium heat until thickened.

Pour the mango mixture into the pie crust.

Bake for 30-35 minutes, or until the crust is golden brown.

Remove from the oven and let it cool for 2 hours.

Top with whipped cream and garnish with mint leaves.
