Ingredients
  • 2 cup Matzo meal
  • 4 large Eggs
  • 1 cup Sugar
  • 1/2 cup Vegetable oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 1/2 cup Applesauce
  • 1 teaspoon Cinnamon
  • 1/2 cup Raisins
  • 1/2 cup Chopped nuts
Instructions
  1. Preheat the oven to 350°F (175°C). In a large bowl, mix together the matzo meal, sugar, vegetable oil, lemon juice, vanilla extract, salt, applesauce, cinnamon, raisins, and chopped nuts. In a separate bowl, beat the eggs until frothy, then fold them into the matzo mixture. Pour the batter into a greased 9-inch round cake pan. Bake for 40 minutes or until golden brown. Remove from the oven and let it cool for 30 minutes before serving.
