Heat olive oil in a large pot over medium heat. Add the lamb shoulder and cook until browned on all sides. Remove the lamb from the pot and set aside.

Return the lamb to the pot and add the red wine, beef stock, thyme, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 1 hour and 30 minutes, or until the lamb is tender.
