  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Stir in the cooked and crumbled bacon.
  5. In a separate bowl, whisk together the maple syrup, heavy cream, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  8. Pat the dough into a circle about 1 inch (5 cm) thick.
  9. Cut the dough into 8 wedges and transfer them to the prepared baking sheet.
  10. Bake for 15-18 minutes, or until the scones are golden brown.
  11. Remove from the oven and let them cool on a wire rack for 10 minutes before serving.
