  1. In a small bowl, dissolve gelatin in orange juice and let it sit for 5 minutes.
  2. In a blender, puree mango until smooth.
  3. In a mixing bowl, whip cream until soft peaks form. Gradually add sugar and vanilla extract while continuing to whip until stiff peaks form.
  4. Gently fold mango puree into whipped cream.
  5. Heat the gelatin mixture in the microwave for about 20 seconds or until it becomes liquid. Pour the gelatin mixture into the mango-cream mixture and fold gently until well combined.
  6. In a separate bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  7. Pour the mango-orange mousse mixture over the crust and smooth the top.
  8. Refrigerate for at least 3 hours or until set.
  9. Before serving, garnish with fresh mint leaves if desired.
