Ingredients
  • 200 gram Digestive Biscuits
  • 100 gram Butter
  • 400 gram Cream Cheese
  • 100 gram Powdered Sugar
  • 1 cup Mango Puree
  • 1 cup Whipping Cream
  • 2 teaspoon Gelatin
  • 0.25 cup Water
  • 1 piece Mango Slices
Instructions
  1. Crush the digestive biscuits and mix them with melted butter. Press the mixture into the bottom of a springform pan.
  2. In a separate bowl, beat the cream cheese and powdered sugar until smooth. Add the mango puree and mix well.
  3. In a small bowl, dissolve the gelatin in water. Heat the mixture in the microwave for 10 seconds or until the gelatin is completely dissolved. Add the gelatin mixture to the cream cheese mixture and mix well.
  4. In another bowl, whip the whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  5. Pour the mixture over the biscuit base in the springform pan. Smooth the top with a spatula.
  6. Refrigerate the cake for at least 4 hours or until set.
  7. Before serving, garnish with mango slices.
