Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 3/4 cup Granulated sugar
  • 2 large Eggs
  • 1/2 cup Mandarin orange juice
  • 1 teaspoon Mandarin orange zest
  • 1 teaspoon Vanilla extract
  • 1/4 cup Milk
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mandarin orange juice, zest, and vanilla extract.
  4. Gradually mix in the dry ingredients until just blended. Stir in the milk.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Slice and serve.
