In another bowl, beat the egg whites and cream of tartar until frothy. Gradually add the sugar and continue beating until stiff peaks form.

Gently fold the egg white mixture into the batter until well incorporated.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the mamon cool in the molds or muffin tin for 10 minutes.
