Ingredients
  • 2.5 cup Cake Flour
  • 2 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 cup Unsalted Butter
  • 1.5 cup Granulated Sugar
  • 3 large Eggs
  • 2 teaspoon Vanilla Extract
  • 1.5 cup Whole Milk
  • 1 tablespoon Instant Espresso Powder
  • 0.5 cup Hot Water
  • 1.5 cup Unsalted Butter
  • 4 cup Powdered Sugar
  • 2 teaspoon Vanilla Bean Paste
  • 0.5 cup Heavy Cream
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just blended.
  5. Dissolve the instant espresso powder in hot water. Stir into the cake batter.
  6. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
  9. In a mixing bowl, beat the unsalted butter, powdered sugar, and vanilla bean paste until creamy. Gradually add the heavy cream and beat until light and fluffy.
  10. Once the cakes are completely cooled, spread a layer of the espresso buttercream frosting on top of one cake layer. Place the second cake layer on top and frost the entire cake with the remaining frosting.
  11. Let the cake rest for at least 1 hour before serving to allow the flavors to meld together.
  12. Slice and serve.
