Mamas Inside Out Cake with Vanilla Bean & Espresso Butter Cream Frosting
Ingredients
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
-
In a medium bowl, whisk together the cake flour, baking powder, and salt. Set aside.
-
In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
-
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just blended.
-
Dissolve the instant espresso powder in hot water. Stir into the cake batter.
-
Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
-
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
-
Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
-
In a mixing bowl, beat the unsalted butter, powdered sugar, and vanilla bean paste until creamy. Gradually add the heavy cream and beat until light and fluffy.
-
Once the cakes are completely cooled, spread a layer of the espresso buttercream frosting on top of one cake layer. Place the second cake layer on top and frost the entire cake with the remaining frosting.
-
Let the cake rest for at least 1 hour before serving to allow the flavors to meld together.
-
Slice and serve.
