Preheat the oven to 400°F (200°C).

Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook until browned on both sides. Remove the chicken from the skillet and set aside.

In the same skillet, add diced onion, minced garlic, sliced mushrooms, and chopped carrots. Cook until the vegetables are softened.

Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute.

Gradually pour in chicken stock and heavy cream, stirring constantly until the mixture thickens.

Add frozen peas, shredded chicken, salt, black pepper, and fresh thyme. Stir to combine.

Transfer the mixture to a baking dish.

Roll out the puff pastry sheet to fit the top of the baking dish. Place the pastry over the filling and press the edges to seal.

Beat the egg in a small bowl and brush the pastry with the beaten egg.

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown.

Let the pot pie rest for 10 minutes before serving.
