  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, whisk together the cake flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Gradually add the egg whites and vanilla extract to the butter mixture, beating well after each addition.
  5. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the mixed berries.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  10. Once cooled, top the cake with whipped cream and additional berries.
