  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 tablespoon Poppy seeds
  • 1 large Egg
  • 0.5 cup Granulated sugar
  • 0.25 cup Vegetable oil
  • 0.5 cup Low-fat yogurt
  • 2 tablespoon Lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and poppy seeds.
  3. In another bowl, beat the egg and sugar until light and fluffy. Add the vegetable oil, yogurt, lemon juice, lemon zest, and vanilla extract. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
