Preheat the oven to 180°C (350°F).

Grate the carrots and set aside.

In a large bowl, whisk together the eggs, honey, vegetable oil, and vanilla extract.

In a separate bowl, mix together the whole wheat flour, baking powder, cinnamon, nutmeg, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing well.

Fold in the grated carrots, walnuts, and raisins.

Pour the batter into a greased cake pan.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
