Ingredients
  • 150 gram Unsalted Butter
  • 150 gram Light Brown Sugar
  • 2 unit Eggs
  • 1 teaspoon Vanilla Extract
  • 200 gram Plain Flour
  • 50 gram Cocoa Powder
  • 1 teaspoon Baking Powder
  • 100 milliliter Milk
  • 150 milliliter Double Cream
  • 100 gram Icing Sugar
  • 100 gram Raspberries
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In a separate bowl, sift together the flour, cocoa powder, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until well combined.
  6. Spoon the mixture onto a baking tray lined with parchment paper, forming 24 equal-sized rounds.
  7. Bake for 10-12 minutes, or until the cakes are firm to the touch.
  8. Allow the cakes to cool completely on a wire rack.
  9. In the meantime, whip the double cream and icing sugar until stiff peaks form.
  10. Sandwich the cooled cakes together with the whipped cream and raspberries.
  11. Serve and enjoy!
