Ingredients
  • 1.5 cup Cornmeal
  • 1 cup All-purpose flour
  • 2 tablespoon Granulated sugar
  • 1.5 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Milk
  • 2 large Eggs
  • 4 tablespoon Unsalted butter
  • 1 cup Shredded cheddar cheese
  • 4 slice Cooked bacon
  • 2 medium Jalapenos
  • 2 tablespoon Green onions
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, eggs, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the shredded cheddar cheese, cooked bacon, diced jalapenos, and chopped green onions.
  6. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. Serve warm or at room temperature.
