Preheat the oven to 375°F (190°C).

Roll out the puff pastry sheets and cut them into 4-inch rounds.

Place the rounds in a greased muffin tin.

In a large bowl, mix together the corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, and caraway seeds.

Spoon the mixture into each puff pastry round.

Brush the beaten egg over the top of the pies.

Bake for 20-25 minutes, or until the pastry is golden brown.
