Preheat the oven to 350°F (175°C). Crush the gingersnap cookies in a food processor until fine crumbs form.

In a medium bowl, combine the gingersnap crumbs, melted butter, and lime zest. Press the mixture into the bottom and up the sides of a 9-inch pie dish.

Bake the crust for 10 minutes, then remove from the oven and let it cool completely.

In a large bowl, whisk together the lime juice, sweetened condensed milk, and egg yolks until smooth. Pour the mixture into the cooled crust.
