Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lime zest and lime juice.

In a separate bowl, whisk together the coconut milk, all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing well after each addition.

Fold in the shredded coconut. Pour the batter into the prepared loaf pan.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, dust the top of the cake with powdered sugar. Serve and enjoy!
