Ingredients
  • 2 cup Cake flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Unsalted butter
  • 1.5 cup Granulated sugar
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lime zest
  • 2 tablespoon Lime juice
  • 1/2 cup Milk
  • 1 cup Whipping cream
  • 1/4 cup Powdered sugar
  • 10 Strawberries
  • 8 Lime slices
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract, lime zest, and lime juice.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  9. In a chilled bowl, whip the whipping cream until soft peaks form. Gradually add the powdered sugar and continue to whip until stiff peaks form.
  10. Slice the cooled cake in half horizontally. Spread a layer of whipped cream on the bottom half.
  11. Slice the strawberries and arrange them on top of the whipped cream. Place the top half of the cake on top.
  12. Frost the entire cake with the remaining whipped cream.
  13. Garnish with lime slices.
  14. Refrigerate for at least 2 hours before serving. Enjoy!
