Preheat the oven to 180°C (350°F) and grease two 20cm (8-inch) round cake tins.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Sift in the self-raising flour and fold gently until just combined.

Divide the batter equally between the prepared cake tins and smooth the tops.

Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.

Once cooled, spread raspberry jam on one cake layer and sandwich with the other cake layer.

Dust the top of the cake with powdered sugar before serving.
