Ingredients
  • 2 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 3 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 sheet Pie crust
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, cook the lentils according to package instructions. Drain and set aside.
  3. In a separate pan, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.
  4. Add cooked lentils, vegetable broth, tomato paste, thyme, oregano, salt, and black pepper to the pan. Stir well and cook for 5 minutes.
  5. Roll out the pie crust and line a pie dish with it. Pour the lentil mixture into the pie crust.
  6. Cover the pie with another sheet of pie crust and crimp the edges to seal.
  7. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
  8. Allow the pie to rest for 10 minutes before serving. Enjoy!
