  1. Preheat the oven to 180°C (350°F).
  2. Peel and core the apples, then slice them thinly.
  3. In a large bowl, combine almond flour, coconut flour, baking powder, cinnamon, and salt.
  4. In a separate bowl, mix together maple syrup, almond milk, coconut oil, lemon juice, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined.
  6. Grease a round cake pan and pour half of the batter into it.
  7. Arrange the apple slices on top of the batter.
  8. Pour the remaining batter over the apples.
  9. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool for 30 minutes before serving.
