Preheat the oven to 350°F (175°C).

In a saucepan, cook the yellow squash until tender. Drain and mash.

In a mixing bowl, combine the mashed yellow squash, lemon zest, lemon juice, granulated sugar, all-purpose flour, eggs, unsalted butter, vanilla extract, and salt. Mix well.

Pour the mixture into the pie crust.
