  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 0.75 cup Granulated sugar
  • 2 large Eggs
  • 1 tablespoon Lemon zest
  • 2 tablespoon Fresh lemon juice
  • 0.5 cup Milk
  • 0.5 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the lemon zest and lemon juice.
  5. Gradually mix in the dry ingredients alternating with the milk.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the tea cakes to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, dust the tops with powdered sugar.
