  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 1 1/2 cup Granulated sugar
  • 3 Eggs
  • 2 tablespoon Lemon zest
  • 2 tablespoon Lemon juice
  • 1/2 teaspoon Vanilla extract
  • 1/2 cup Buttermilk
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lemon zest, lemon juice, and vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with the buttermilk. Pour the batter into the prepared loaf pan.
  5. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
