  • 1.5 cup Pie Crust
  • 0.5 cup Lemon Juice
  • 1 tablespoon Lemon Zest
  • 4 piece Egg Yolks
  • 1 can Condensed Milk
  • 2 tablespoon Cornstarch
  • 0.75 cup Sugar
  • 0.5 teaspoon Cream of Tartar
  • 4 piece Egg Whites
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Press the pie crust into a 9-inch pie dish.
  3. In a bowl, whisk together the lemon juice, lemon zest, egg yolks, condensed milk, and cornstarch until well combined.
  4. Pour the mixture into the pie crust and smooth the top.
  5. Bake for 15 minutes, then remove from the oven and let cool for 10 minutes.
  6. In a separate bowl, beat the egg whites, sugar, cream of tartar, vanilla extract, and salt until stiff peaks form.
  7. Spread the meringue over the pie filling, making sure to seal the edges.
  8. Return the pie to the oven and bake for an additional 10 minutes, or until the meringue is golden brown.
  9. Remove from the oven and let cool for 2 hours before serving.
