Ingredients
  • 200 gram Pie crust
  • 1 cup Lemon juice
  • 2 teaspoon Lemon zest
  • 4 unit Egg yolks
  • 1 cup Sweetened condensed milk
  • 2 tablespoon Cornstarch
  • 1 cup Sugar
  • 0.25 teaspoon Salt
  • 4 unit Egg whites
  • 0.5 teaspoon Cream of tartar
  • 0.5 cup Sugar
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the pie crust ingredients and press into a pie dish.
  3. Bake the crust for 10 minutes, then remove from the oven and set aside.
  4. In a saucepan, whisk together the lemon juice, lemon zest, egg yolks, sweetened condensed milk, cornstarch, sugar, and salt.
  5. Cook over medium heat, stirring constantly, until the mixture thickens.
  6. Pour the lemon filling into the baked pie crust.
  7. In a separate bowl, beat the egg whites and cream of tartar until soft peaks form.
  8. Gradually add the sugar and continue beating until stiff peaks form.
  9. Spread the meringue over the lemon filling, making sure to seal the edges.
  10. Bake for 10-12 minutes, or until the meringue is golden brown.
  11. Remove from the oven and let cool for at least 2 hours before serving. Enjoy!
