Ingredients
  • 1.5 cup Pie crust
  • 0.5 cup Lemon juice
  • 1 tablespoon Lemon zest
  • 1 can Sweetened condensed milk
  • 4 large Egg yolks
  • 4 large Egg whites
  • 0.75 cup Sugar
  • 0.25 teaspoon Cream of tartar
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Cornstarch
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the pie crust ingredients and press the mixture into a pie dish.
  3. Bake the crust for 10 minutes, then remove from the oven and let it cool.
  4. In a separate bowl, whisk together the lemon juice, lemon zest, sweetened condensed milk, and egg yolks until well combined.
  5. Pour the mixture into the cooled pie crust.
  6. In another bowl, beat the egg whites until foamy. Add the sugar, cream of tartar, and vanilla extract, and continue beating until stiff peaks form.
  7. Spread the meringue over the lemon filling, making sure to seal the edges.
  8. Bake the pie for 10 minutes or until the meringue is golden brown.
  9. Remove from the oven and let it cool for 2 hours before serving.
  10. Serve chilled and enjoy!
