Lemon drizzle cake is a popular traditional British cake that is often served with tea.

Preheat the oven to 180°C/350°F. Grease and line a loaf tin.

In a large bowl, cream together the butter and caster sugar until light and fluffy.

Beat in the eggs, one at a time, adding a tablespoon of flour with each egg.

Fold in the remaining flour and lemon zest.

Pour the batter into the prepared tin and bake for 35 minutes, or until a skewer inserted into the center comes out clean.

While the cake is still warm, pierce the top with a skewer and drizzle over the lemon juice.

Allow the cake to cool in the tin for 10 minutes, then remove and transfer to a wire rack to cool completely.

Once cooled, sift icing sugar over the top of the cake.
