  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lemon zest and lemon juice.
  4. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
  5. Pour the batter evenly into the prepared pans. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.
  7. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Place one cake layer on a serving plate and spread a layer of whipped cream on top. Place the second cake layer on top and frost the entire cake with the remaining whipped cream.
