Lemon Cranberry Scones
Ingredients
Instructions
-
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
-
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
-
Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
-
Stir in the lemon zest and dried cranberries.
-
In a separate bowl, whisk together the egg, heavy cream, vanilla extract, and lemon juice.
-
Pour the wet ingredients into the dry ingredients and gently mix until just combined.
-
Turn the dough out onto a lightly floured surface and knead it a few times to bring it together.
-
Pat the dough into a circle about 1 inch (5 cm) thick. Cut the circle into 8 wedges.
-
Place the scones onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
-
Allow the scones to cool on a wire rack for 10 minutes.
-
Optional: In a small bowl, mix powdered sugar with a little lemon juice to make a glaze. Drizzle the glaze over the cooled scones.
-
Serve the lemon cranberry scones warm or at room temperature.
