Ingredients
  • 1.5 cup Graham cracker crumbs
  • 0.5 cup Butter, melted
  • 2 package Cream cheese, softened
  • 0.75 cup Granulated sugar
  • 3 tablespoon Lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 3 large Eggs
  • 1 cup Whipped cream
  • optional for garnish Lemon slices
Instructions
  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) pie dish to form the crust.
  3. In a large mixing bowl, beat cream cheese, sugar, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Pour the filling into the crust.
  6. Bake for 35-40 minutes or until the center is set.
  7. Remove from the oven and let it cool for 2 hours.
  8. Refrigerate for at least 4 hours or overnight.
  9. Serve chilled with whipped cream and garnish with lemon slices if desired.
