  1. Preheat the oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt for the cake layers.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined. Stir in the lemon zest and yellow food coloring, if desired.
  5. Divide the batter evenly among the prepared cake pans and smooth the tops. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  6. While the cakes are baking, prepare the lemon filling. In a small saucepan, combine the lemon juice, granulated sugar, egg yolks, and butter. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove from heat and let cool.
