  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a pie dish.
  3. In a mixing bowl, combine the blueberries, lemon juice, lemon zest, sugar, cornstarch, and salt.
  4. Pour the blueberry mixture into the pie crust.
  5. Roll out the second pie crust and cut it into strips.
  6. Create a lattice pattern on top of the pie with the pie crust strips.
  7. Beat the egg and brush it over the pie crust.
  8. Dot the top of the pie with butter.
  9. Bake for 40 minutes, or until the crust is golden brown.
  10. Allow the pie to cool for at least 2 hours before serving.
