Lemon Basil Layer Cake with Lemon Cream Frosting
Ingredients
Instructions
-
Preheat the oven to 350°F (180°C). Grease and flour three 9-inch round cake pans.
-
In a medium bowl, whisk together the flour, baking powder, and salt.
-
In a large bowl, cream together the softened butter, granulated sugar, lemon zest, and lemon juice until light and fluffy. Add the eggs, one at a time, beating well after each addition.
-
Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture. Fold in the chopped basil.
-
Divide the batter evenly among the prepared pans. Smooth the tops with a spatula.
-
Bake for 22-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Remove from the oven and let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
-
For the lemon cream frosting, beat together the softened butter and cream cheese until smooth. Gradually add the powdered sugar, lemon zest, and lemon juice, beating until creamy.
-
Once the cakes have cooled, spread a layer of lemon cream frosting on top of one cake layer. Repeat with the remaining layers.
-
Frost the sides and top of the cake with the remaining lemon cream frosting. Garnish with fresh basil leaves.
-
Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together and the frosting to set.
-
Serve and enjoy!
