Ingredients
  • 500 gram Leeks
  • 50 gram Butter
  • 50 gram Flour
  • 500 ml Milk
  • 200 gram Cheddar Cheese
  • 2 unit Eggs
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 300 gram Shortcrust Pastry
Instructions
  1. Preheat the oven to 180°C.
  2. Slice the leeks and sauté them in butter until soft.
  3. Add flour to the leeks and cook for 1 minute.
  4. Gradually add milk, stirring constantly, until the mixture thickens.
  5. Remove from heat and stir in grated cheddar cheese.
  6. Beat the eggs and add them to the mixture. Season with salt and black pepper.
  7. Roll out the shortcrust pastry and line a pie dish with it.
  8. Pour the leek and cheese mixture into the pie dish.
  9. Cover with another layer of pastry and seal the edges.
  10. Make a few slits on the top crust for steam to escape.
  11. Bake for 40 minutes or until the pastry is golden brown.
  12. Let the pie rest for 10 minutes before serving.
