  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine blueberries, sugar, cornstarch, lemon juice, and salt. Mix well.
  3. In a separate bowl, combine flour and butter until crumbly. Gradually add cold water and mix until the dough comes together.
  4. Divide the dough into two portions, one slightly larger than the other. Roll out the larger portion to fit the bottom of a pie dish.
  5. Pour the blueberry filling into the pie dish.
  6. Roll out the remaining dough and cut into strips. Create a lattice pattern on top of the pie.
  7. Brush the lattice with beaten egg and sprinkle with sugar.
  8. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Allow the pie to cool for at least 2 hours before serving.
