Lane Cake is named after Emma Rylander Lane, who first published the recipe in her cookbook ‘Some Good Things to Eat’ in 1898.

  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a medium bowl, combine the flour, baking powder, and salt.
  3. In a large mixing bowl, cream the butter and granulated sugar until light and fluffy. Beat in the vanilla extract.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Fold in the beaten egg whites.
  6. Stir in the raisins, chopped pecans, shredded coconut, and whiskey.
  7. Divide the batter evenly among the prepared cake pans. Smooth the tops with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  10. In a mixing bowl, beat the egg yolks until thick and lemon-colored. Gradually add the powdered sugar, butter, vanilla extract, and whiskey. Beat until smooth.
  11. Spread the frosting between the cake layers and on top. Decorate as desired.
  12. Let the cake rest for at least 1 hour before serving.
